I’ve heard only to double cleanse if the spf is water resistant. Otherwise a generous single cleanse is okay (that’s what I do every day!)

Yes, in general single generous cleanse is the most gentle approach (assuming the cleanser is gentle as well), but with water resistant make up and sunscreens might need more than a usual cleanser. A thick cleansing balm could do the job in one cleanse though - so really up to you. It is generally better to avoid double cleansing if your skin is prone to sensitivity
What about with mineral sunscreen. I always feel like it’s harder to get off in general?
You only need to double cleanse if you use spf or makeup. I started using a great oil and soap hybrid, so I don’t have to buy two separate cleansers to do the double cleansing routine. I use La Roche-Posay Lipikar AP+ Gentle Foaming Cleansing Oil based on the recommendation from a YouTuber NoBSBeauty. It works wonders! It doesn’t break my skin out or dry it out.
